Criollo

Another Capsicum Baccatum, the Criollo pepper, is a wonderfully complex chili with Andean roots. Like its close cousin, the Ají Amarillo, this pepper is mild with interesting flavor profiles. It combines tropical fruit notes with sweet freshness and earthy undertones.

The color of the ripe Criollo mash is a vibrant orangish red that is very appealing, and its heat level makes it possible to use raw and pickled. It is not well known outside its native countries but with its complexity of flavor, versatility, and pleasant heat, it should be!
